Guacamole is my favorite appetizer, snack, and sometimes even dinner. Healthy fats are involved, so it is a perfectly acceptable dinner. I am just trying to keep my heart happy:)

I love classic guacamole, but I LOVE creating new guacamole recipes. Every time we make guacamole, Josh looks at me with “that” look and asks if we are making regular guacamole or Maria’s mixed up guacamole. The answer is usually mixed up:) I’ve made:

Chipotle Peach Guacamole-this fresh and simple guacamole is the perfect summer appetizer or snack.

Peaches are in abundance right now and I can’t get enough. I bought a few too many at the farmers market and decided to try them in guacamole. I love mango guacamole, so why not peach guacamole?

The peaches were an amazing addition to the guacamole. Why haven’t I been making peach guacamole for years? I let Josh sample the guacamole and he liked it but suggested we added a little chipotle peppers in adobo sauce. Umm, YES! Why didn’t I think of that? I guess Josh is catching on to my crazy guacamole creations.

The smoky, spicy kick from the chipotle peppers was just what the guacamole needed. We couldn’t stop dipping, it was SO good.

A few Chipotle Peach Guacamole tips:

  • Make sure you use ripe avocados and a ripe peach. If your fruit is not ripe, you can put it in a paper bag with a banana to help speed up the process. If your fruit is ripe and you aren’t ready to use, keep them in the fridge instead of on the counter. (Yes, avocados are fruit.)
  • You can find chipotle peppers in adobo sauce in most grocery stores. They come in a small can.
  • A little chipotle peppers and adobo sauce goes a long way, you will only need 2-3 teaspoons. You can freeze the leftover peppers and sauce. Remove from the can and place in a freezer container or bag. Make sure you label the peppers.
  • This guacamole is best the day it is made.
  • Serve the peach guacamole with tortilla chips, cut up veggies, or along side any Mexican meal.

Josh is already begging to make Chipotle Peach Guacamole again. I am glad he is on board with my fun and tasty guacamole creations. This one is a WINNER and it is for sure happening Labor Day weekend. You should make it too!

Chipotle Peach Guacamole

Easy guacamole with fresh peaches and chipotle peppers makes a great summer appetizer or snack. Serve with tortilla chips, cut up vegetables, or your favorite Mexican meal.

Yield: Serves 6

Prep Time: 10 minutes

Total Time: 10 minutes

Ingredients:

  • 3 large avocados
  • 1 large peach, peeled and chopped
  • 1/2 jalapeno pepper, seeded and diced
  • 2 tablespoons diced red onion
  • 3 tablespoons chopped fresh cilantro
  • 1 lime, juiced
  • 2-3 teaspoons diced chipotle peppers in adobo sauce
  • Kosher salt, to taste

Directions:

  1. With a sharp knife, cut the avocados in half lengthwise. Remove seed. Scoop out the flesh with a spoon. Place in a bowl. Use a fork to roughly mash the avocado.
  2. Add the chopped peaches, jalapeno, red onion, cilantro, lime juice, and diced chipotle peppers. We use 3 teaspoons of diced chipotle peppers, but if you want it a little more mild, use 2. Stir and season with Kosher salt, to taste. Serve immediately.
