Making sandwiches with Thanksgiving leftovers is one of our favorite ways to continue to enjoy them for a few days following Thanksgiving. Be it a simple turkey, mayo and cheese sandwich on a soft dinner roll or a serious stacked sandwich on marbled rye with all the fixings, it’s a great way to reinvent leftovers to where each person gets to enjoy them however they please.

The beauty about this sandwich board is that you can use whatever leftovers you have along with any other sandwich makings you have on hand. You’d be surprised how delicious of a sandwich one can create with leftover Thanksgiving foods.

Let me walk you through how I built this board…

It all starts with a good large wood board that will fit in the middle of your table or kitchen counter for everyone to be able to reach what they need to build their own sandwich. I used this 18″ x 24″ Teakhaus Reversible Wood Board from Sur La Table.

I used a variety of small white ribbed ramekins, also from Sur La Table, to put most of the leftovers and spreads in.

And I used these adorable knotted cheese knives and serving spoons for spreading and scooping everything.

Here’s a list of all the yumminess I put on our board including the Thanksgiving leftovers along with additional breads, spreads, veggies and fruits we had on hand:

  • turkey
  • ham
  • provolone cheese slices
  • colby jack cheese slices
  • creamy Brie cheese
  • sharp cheddar cheese cracker cuts (from Trader Joe’s)
  • roasted butternut squash
  • kale, cranberry & slivered almond salad
  • whipped sweet potatoes
  • green beans
  • stuffing or dressing
  • brussels sprouts salad
  • cranberry sauce
  • tomatoes, sliced
  • red onion, sliced (you could also put out leftover crispy fried onions)
  • pear, thinly sliced
  • apple, thinly sliced
  • soft white dinner rolls
  • wheat dinner rolls
  • whole wheat sandwich bread, sliced
  • marbled rye bread, sliced
  • turkey gravy
  • mayonaise
  • mustard
  • grainy dijon mustard

Remember, there are no rules when it comes to building these boards! Just put out whatever you have leftover and what you think would give your crew a good variety to make a great sandwich.

Above are images of some different sandwiches we created with the variety of leftovers on our build-your-own sandwich board. They were all so yummy! Below are details about what is on each sandwich pictured (from top left to bottom right):

  • soft white dinner roll, brie cheese, turkey, cranberry sauce and kale salad (fabulous!)
  • wheat dinner roll, cranberry sauce, turkey, whipped sweet potatoes, brussels sprouts salad, provolone, grainy dijon mustard (so yummy!)
  • marbled rye bread, mustard, stuffing/dressing, green beans, ham, provolone, roasted butternut squash (this one was a beast, but oh so delicious!)
  • soft white dinner roll, mayonnaise, turkey, sharp cheddar cheese (simple yet scrumptious!)
  • open-faced sandwich on whole wheat bread, brie, turkey, sliced pear and cranberry sauce (mmmm…mmmm!)

Instructions

  1. Space all of your Thanksgiving leftovers and any additional sandwich makings you have on hand out on a large wood board. Set out for each person to build their own sandwich. Enjoy!

Notes

You can control the serving size based on how much you put on your board. The board pictured was built to serve 10-12 people.
