I’m totally biased, yes, but it is a really good one and I know you’re going to adore it!
With the warmer temps comes backyard BBQs, pool parties, and the like and I know I’m going to get invited to hundreds this summer (KIDDING. I will be invited to -100 this summer). But on the off-chance I am invited somewhere cool, I need to know what to make in a pinch that can feed a decent group of people, that’s absolutely delicious, and entirely no-bake, because no one wants to bake in the summer! This is that recipe.
Oddly enough, when I was thinking of easy summertime recipes, I thought up this one and figured I was a genius – surely this hasn’t been done before! But of course, my pal (and former IRL neighbor!) Dorothy from Crazy For Crust had already made her version which is basically the exact same! Great minds, right? She made hers a few years back for Valentine’s Day (which these would be amazing for!) and I’m making a big batch for party season!
These Oreo Truffle-Stuffed Strawberries only have four ingredients: strawberries, Oreos, cream cheese, and chocolate candy coating. Five if you count chocolate sprinkles, but I personally subscribe in the belief that sprinkles are a necessary pantry staple.
To start, pick the largest berries you can find. I actually found some gargantuan ones at Walmart of all places, but I know Costco berries are mega-big. I just feel like the bigger the berry, the better it’ll be since it has more room to fill with an Oreo truffle 🙂
Slice off the caps (the green part) of the berries. Then use a melon baller (the small side) to hull the center from each berry. I originally used a paring knife but I found the melon baller was SO much easier. Discard the tops and centers, then gently pat each berry, especially the cut and scooped side, well with a dish towel or paper towel. You want to pat them pretty dry so that when you fill them the Oreo truffles don’t slip out, and the chocolate won’t seize from the moisture.
Now you need to make your Oreo truffles! Simply pulverize some Double Stuf Oreos in a food processor until they reach a fine crumb consistency, then add in a little cream cheese and pulse to combine. The mixture is perfect when it is moistened and can be rolled into a truffle-size ball.
Take a 1/2 Tablespoon-size measuring spoon (or about 2 teaspoon-size!) and create little Oreo truffles. Gently press each truffle into the center of the hulled strawberry and smooth out the top so it is flush with the strawberry. Place on a parchment-lined baking sheet and repeat with remaining berries. You may have leftover Oreo truffles; that’s perfect for another snack!
Once all the berries are filled, melt your candy coating according to package directions or until smooth. Dunk the cut-side of each filled strawberry in chocolate and allow the excess to drip off before dredging it in chocolate sprinkles or more Oreo crumbs. Allow the chocolate to set completely before serving!
I will say these are best made and eaten the same day, otherwise the moisture from the strawberries starts to leak through and the berries themselves can get a little mushy next day.

These Oreo Truffle-Stuffed Strawberries are addictive, easy and come together in minutes with just four simple ingredients!
- One pound big fresh strawberries, tops cut off
- 24 Double Stuf Oreo cookies
- 4 ounces cream cheese
- One 12-ounce package chocolate candy melts, such as Ghirardelli
- Chocolate sprinkles, optional but recommended
- Cut the green caps off of the strawberries in a straight-across line. Using a melon baller or huller, hull the center of each strawberry to create a round bowl in the center of the berry. Discard the tops and filling. Pat the strawberries, especially the cut side, dry with a paper towel or dish towel. Set the strawberries onto a parchment-lined baking sheet.
- In a food processor, pulse the Oreo cookies until fine crumbs are achieved. Add in the cream cheese and beat until mixture is moistened and tacky and can easily form a ball.
- Using a ½ Tablespoon-size or 2-teaspoon size measuring spoon, form Oreo truffle balls. Gently press each truffle ball into the center of the berry, pressing the tops to lie flush with the cut strawberry. Repeat with remaining truffles and berries. You may have additional Oreo truffle “dough” – just use this to make Oreo truffles!
- Melt the candy melts according to package directions. Dip the tops of the berries into the chocolate mixture, allowing any excess to drop off. Dredge in chocolate sprinkles, or sprinkle with any remaining crushed Oreo crumbs. Allow chocolate to set on the strawberries before serving. These strawberries are best made and served the same day.
